It's time for me to start thinking about the most important part of Super Bowl Sunday...the food! And since the Patriots are not playing the food (and commercials) are what this afternoon is now about!
I am going to be skiing all day Sunday so this year I had to choose apps that can be made on Saturday and easily heated up for the game.
For snacky apps:
I am going to make 2 dips which I will serve with cut up veggies: carrots, celery, zucchini & peppers
1. Spinach Artichoke Dip
2. Buffalo Chicken Dip
And 3. Nachos
For some sustenance I am going to make
4. Crockpot chili - Using ground elk, diced tomatoes, tomato paste, bell peppers, zucchini, carrot, onion, garlic, spices
5. Crockpot Turkey Meatballs - ground turkey, egg, almond flour & spices
And For dessert:
6. Chocolate Chip Cookies
7. Carrot Cake
I will get grocery shopping done today during this snow storm, hopefully a quick 3 hour session in the kitchen tomorrow to prep and a relaxing Sunday to enjoy.
Tomorrow I plan to start with cooking the chicken for the buffalo dip, when it's done I will dice it up and put it in a pyrex. I will assemble the spices for the dips in two separate pyrex. On Sunday I will dump the container of assembled spices in the the other ingredients, mix and put them in the oven right before the game.
After that I will make both desserts. The frosting I will make and keep separate, but the cookies and cake will be done.
Next I will put the meatballs together, everything raw, and put them in a ziplock freezer bag with the tomato sauce. The whole bag will go in the freezer. I will be doing the same thing with the chili. I will dice all the ingredients up and put it all in another bag in the freezer. Sunday morning I will put them in the crockpot right from the freezer.
Once those are done I will make the salsa and guac for the nachos. If you keep the avocado pit in the guac it helps keep it from browning. The other trick I learned from my brother is to put the guac in a pyrex then drape plastic wrap over the guac so it's touching it making a seal. Put about an inch of water over the plastic wrap and cover with the lid. Works like a charm!
The final thing I will do is cut up the veggies that we will use to eat the dips with.
